1 ciabatta loaf or any baguette, cut into 1cm slices
200g mixed plum tomatoes, roughly chopped
200g ricotta cheese
2 tablespoons olive oil
1 garlic clove
Some basil leaves
Salt and pepper
Instructions
Pre-heat a griddle pan over high heat and grill your slices of bread on each side for approximately 1 minute until they are nicely charred
Rub one side of your toast with garlic and spread a thick layer of ricotta, topping it with the chopped tomatoes. Season with salt and pepper, add a drizzle of olive oil and finish with one or two basil leaves.
