Halloumi Cheese & Bacon Burger

Ingredients
  

  • 2 Halloumi burger slices
  • 1 brioche burger bun
  • 1 large tomato
  • 4 rashers of smoked bacon
  • 1 tablespoons olive oil
  • 25 g rocket leaves
  • 2 tablespoons of mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon mustard
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon white vinegar
  • Barbeque sauce

Instructions
 

  • Step 1: We’ll start off by making the burger sauce – take a small bowl and whisk together the mayo, ketchup, mustard, sweet pickle relish and the vinegar.
  • Step 2: rub the two halloumi burger slices with some olive oil and grill them until they become soft and golden brown – I usually cook them for 1-2 minutes on each side.
  • Once you’re done cooking your halloumi, cook your bacon until it becomes crispy
  • Step 3: Now it’s time to assemble your burger - Grill your buns until charred and then spread some burger sauce on your bun base. Add one big tomato slice, your halloumi cheese and the crispy bacon, topping with barbeque sauce and some rocket leaves. Finish with the top bun.
  • Serve with rice or chips.
