Sautéed Mushrooms & Olives Grilled Cheese

As there’s nothing like a grilled cheese sandwich when it comes to comfort food, we decided to take it to the next level by adding some olives and sautéed mushrooms.

 

For this delicious grilled cheese recipe we used a 7-seeded Sourdough bread and 3 different types of cheese. Yeah, you heard that right, 3 types of cheese: mature cheddar, red Leicester and Edam cheese. Some would say that cheddar is enough, however, we really like the gooiness provided by the Edam cheese.

Sautéed Mushrooms & Olives Grilled Cheese

Prep Time 10 minutes
Cook Time 10 minutes

Ingredients
  

Sourdough bread ( 4 slices)

100g shredded Red Leicester

100g shredded mature cheddar

Edam cheese (4 slices)

200g closed cup mushrooms

Black pitted olives

4 tablespoons butter

1 tablespoon olive oil

1 garlic clove

Instructions
 

Step 1: Sautee your mushrooms, season to taste and set aside.

    Step 2: Heat 1 tablespoon butter in a cast-iron or non-stick skillet over medium-low heat.

      Butter one slice of bread and place it butter side down onto the frying pan and then add 2 slices of Edam cheese. On top of that add the sautéed mushrooms, the olives and the rest of the shredded cheese.

        Tip: When the butter is too hard to spread, I usually melt it in a pan and place my bread in there to absorb it.

          Step 3: Take a second slice of bread, butter it on one side and place it butter side up on top of your sandwich. Cook for 3-4 minutes until golden brown and flip over. The secret here is to cook the sandwich over medium-low heat to make sure the cheese is thoroughly melted.
