Prawn Noodles Stir Fry

Being a big fan of stir-fries, I started making this dish in my second year of uni, inspired by the ready meals you find in supermarkets.

This quick and easy recipe is one of my favourites as it packs multiple flavours and the fiery kick you get from the chillies is just amazing. 

 

I made this recipe for most of my friends and they all loved it, so why not give it a try?

Prawn Noodles Stir Fry

Ingredients
  

  • Noodles
  • Fresh Prawns
  • 2 tablespoons of dark soy sauce
  • 3 tablespoons of sweet chilli sauce
  • Vegetables:
  • Carrots
  • Beansprouts
  • Cabbage
  • Chinese leaf
  • Red Onion
  • Peppers
  • Fine beans
  • Chopped Chillies
  • Spring onion – for garnishing

Instructions
 

  • Step 1: Start by cooking the noodles according to the instructions on the package (this usually involves boiling for around 3-4 minutes) then drain them and set aside.
  • Step 2: Heat 2 tablespoons of olive oil in a wok or large frying pan and then cook the fresh prawns for 1 minute until they turn pink.
  • Step 3: Add the finely sliced vegetables and cook for 4-5 minutes until they become tender, stirring occasionally. At this stage you have to add the soy sauce as it gives your vegetables extra flavour.
  • If you can’t be bothered preparing the vegetables, you can buy those “stir fry” packs from most of the supermarkets – I do it from time to time and it saves a lot of time and money.
  • TIP: if you want your vegetables to retain some of their initial crunchiness, reduce their cooking time slightly.
  • Step 4: Once the vegetables are cooked put your noodles in, adding a pinch of salt, some black pepper, the sweet chilli sauce and stir gently.
  • Garnish with some finely chopped spring onions, sesame seeds or a few more chillies for extra spiciness and serve.
